GRANDPA'S FAVORITE CREAM OF CABBAGE SOUP

List of Ingredients
- 4 c water
- 2 T chicken bullion
- 3 c peeled potatoes, diced
- 1 c onion, chopped
- 1 c rutabaga, diced
- 1/2 c carrots, diced
- 6 c cabbage, chopped
- 1 c celery, chopped
- 1/2 c green pepper, chopped
- 1 t salt
- 1 t dill weed
- 1 c butter
- 1 c flour
- 2 c chicken broth
- 2 c milk
- 1/2 lb American cheese
- 1/2 t thyme
- pepper to taste
- Additional milk, optional
Instructions
- In a dutch oven bring water & bullion to a boil.
- Add potatoes
onion, rutabaga & carrots. Reduce heat. Cover & simmer for
5 minutes.
- Add cabbage, celery & green pepper. Simmer un-
covered 5 minutes or until vegetables are tender. Add salt &
dill.
- In a saucepan, melt butter. Stir in flour, cook & stir over
medium heat until golden brown.
- Gradually add milk & broth
stirring until smooth.
- Add cheese, thyme & pepper. Cook on
low until cheese is melted.
- Stir into vegetable mixture. Simmer
5 minutes. Thin with milk if needed.
