MEXICAN CHICKEN SOUP

List of Ingredients
- 1 lb boneless skinless chicken breast
- 4 c water
- 1 c celery, chopped
- 1 c onion, chopped
- 1 c zucchini, chunks
- 1 c carrot, sliced
- 1 c corn
- 1/2 t salt
- 1 (28oz) can tomatoes
- 1 (8oz) can tomato sauce
- 1 (4oz) can diced green chilies
- 1 c salsa
- 1 T sugar
- 2 t chile powder
- 2 t cumin
- 1 1/2 T garlic minced
Instructions
- Cut chicken in small pieces.
- Place chicken & water in a heavy pan with a lid. Add all ingredients & mix well.
- Bring to a boil. Reduce heat, cover & simmer for 40 minutes.
Final Comments
This freezes well. Serve with corn chips.
