    MEXICAN CHICKEN SOUP

    List of Ingredients


    • 1 lb boneless skinless chicken breast
    • 4 c water
    • 1 c celery, chopped
    • 1 c onion, chopped
    • 1 c zucchini, chunks
    • 1 c carrot, sliced
    • 1 c corn
    • 1/2 t salt
    • 1 (28oz) can tomatoes
    • 1 (8oz) can tomato sauce
    • 1 (4oz) can diced green chilies
    • 1 c salsa
    • 1 T sugar
    • 2 t chile powder
    • 2 t cumin
    • 1 1/2 T garlic minced


    Instructions


    1. Cut chicken in small pieces.

    2. Place chicken & water in a heavy pan with a lid. Add all ingredients & mix well.

    3. Bring to a boil. Reduce heat, cover & simmer for 40 minutes.



    Final Comments


    This freezes well. Serve with corn chips.
