MONTEREY CLAM CHOWDER

List of Ingredients
- 1/2 lb bacon
- 1/2 c butter
- 1 c carrots, diced
- 1 c onion
- 1 c potato, diced
- 1/2 c celery, sliced
- 1 1/2 c flour
- 4 c chicken broth
- 2 c milk
- 2 c half & half
- 2 c cream
- 1 T garlic, minced
- 1 t pepper
- 3 (7oz) cans chopped clams
Instructions
- In a skillet over medium heat, cook bacon until starting to brown.
- Add butter to skillet.
- Add carrots, onions, potato & celery. Cook & stir until
vegetables are tender but not brown.
- When vegetables are cooked add flour. Cook for about 2 minutes, allowing flour to cook while stirring.
- Add chicken broth, milk, cream & half & half. Cook & stir until smooth & bubbly.
- Add garlic, pepper & chopped clams.
- Transfer to a Slow Cooker. Cook on low for 3 hours.
Final Comments
Freezes well.
