VEGETABLE BEEF SOUP

List of Ingredients
- 1 1/2 lbs stew meat or lean ground beef
- 1 large onion, chopped
- 1 (46 oz) can tomato or V-8 juice
- 1 pkg frozen green beans
- 1 pkg frozen carrots
- 2 pkg frozen mixed vegetables
- 1 pkg frozen whole corn
- 1 can cream style corn
- 2 quarts water
- 1 pkg frozen green peas
- 1 c small elbow macaroni
- 4 medium potatoes, diced
- Season to taste
Instructions
- Brown meat in a large soup pot. Drain off any fat.
- Add onion, tomato juice, beans, carrots, mixed vegetables, corn & water. Bring to a boil, turn down & simmer for 1 hour.
- Cook diced potatoes in a separate pan & add to the soup pot after it has simmered 1 hour.
- Adding any seasonings & the peas & pasta & simmer about 30 minutes. Add more liquid if needed.
