    VEGETABLE BEEF SOUP

    List of Ingredients


    • 1 1/2 lbs stew meat or lean ground beef
    • 1 large onion, chopped
    • 1 (46 oz) can tomato or V-8 juice
    • 1 pkg frozen green beans
    • 1 pkg frozen carrots
    • 2 pkg frozen mixed vegetables
    • 1 pkg frozen whole corn
    • 1 can cream style corn
    • 2 quarts water
    • 1 pkg frozen green peas
    • 1 c small elbow macaroni
    • 4 medium potatoes, diced
    • Season to taste


    Instructions


    1. Brown meat in a large soup pot. Drain off any fat.
    2. Add onion, tomato juice, beans, carrots, mixed vegetables, corn & water. Bring to a boil, turn down & simmer for 1 hour.
    3. Cook diced potatoes in a separate pan & add to the soup pot after it has simmered 1 hour.
    4. Adding any seasonings & the peas & pasta & simmer about 30 minutes. Add more liquid if needed.
