1/2 cup unsweetened applesauce
1 cup Splenda
1/2 cup brown sugar
2 large egg whites
1 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 large bananas, mashed
3 cups quick cooking oats
1/2 cup chopped pecans
Recipe
Preheat oven to 375 degrees.
Blend together applesauce, egg white, bananas, Splenda, brown sugar and vanilla extract. Add flour, baking soda, and salt. Add oats and pecans, stirring until well mixed.
Drop tablespoons of dough onto an ungreased cookie sheet about 2 inches
apart. Bake 10 to 12 minutes. Cool on wire rack.
Yield: 48 cookies
