1/2 c. mayonnaise
2 tsp. Dijon mustard
2 tsp. honey
Whole-wheat bread slices, toasted
Alfalfa sprouts
Swiss cheese slices
Thin tomato slices
Thin peeled avocado slices
Slices turkey breast
Recipe
Combine mayonnaise, mustard and honey; mix well. For each sandwich, spread one toast slice with mayonnaise mixture. Cover with sprouts, cheese, tomatoes, and second toast slice. Top with avocado, turkey and third toast slice spread with mayonnaise mixture.
LAYERED PICNIC CLUB SANDWICH
1 loaf unsliced round bread (about 9
inch in diameter)
Lettuce leaves
3/4 lb. sliced cooked roast beef
1 lg. tomato, sliced
2/3 c. creamy Italian dressing or
1000 Island dressing
1/3 lb. sliced Cheddar cheese
1/2 lb. sliced cooked turkey
Cut bread in half horizontally; hollow out center of each half, leaving 1/4 inch shell. Spread 1/3 cup dressing into each shell; line bottom shell with lettuce. Into bottom shell, layer cheese, roast beef, remaining dressing, turkey, then tomato. Top with lettuce; replace top shell. To serve, cut into wedges. Makes 5 to 6 servings.
