ANOTEHR VERSION OF THE FAMOUS SOUP
List of Ingredients
2 lbs. okra
1 lg. onion, chopped
1 bell pepper, chopped
2 cloves garlic, chopped
Salt, black and red pepper
8 c. water
Oil
Recipe
Wash and dry okra, chop into thin round slices. Put into a thick, heavy aluminum pot. Put in enough oil to cover bottom. When oil is hot, reduce heat to medium and add okra. Cover to cook. Remove cover often and stir to keep from sticking. When sticky substance has disappeared and okra is browned, add onion, bell pepper, garlic and seasonings. Let onion and bell pepper wilt then add water. You can add chicken and let cook for one hour or add crabs and shrimp and let cook for 25 minutes. Serve over rice.
