    Source of Recipe

    My recipe collection

    Recipe Introduction

WE ARE FROM THE SOUTH, SO WE ARE ALWAYS LOOKING FOR WAYS TO PUT OUR "GOOD OLE VIDALIA ONIONS" TO USE

    List of Ingredients

    1 deep dish pie shell
    2 1/2 lbs. onions
    3 tbsp. butter
    4 eggs
    1/2 c. grated Parmesan cheese
    1 c. cultured sour cream
    1 tsp. salt
    1/4 tsp. fresh ground pepper
1 tbsp. herbs, dill or celery seeds
4 strips of cooked bacon or sausage,
    crumbled

    Recipe

Preheat oven to 450 degrees. Skin and thinly slice onions. Melt 3 tablespoons of butter in heavy saucepan. Add onions. Stir and cook over low heat until translucent. Set aside to cool. Combine and heat slowly: 3 eggs, sour cream, salt, pepper, herbs and cheese. Mix in onions. Brush bottom of pie shell with 1 slightly beaten egg. Add onion mixture to pie shell. Sprinkle bacon or sausage on top. Bake pie at 450 degrees for 10 minutes. Reduce heat to 300 degrees until crust is light brown or about 1/2 hour. Serve piping hot and with a tossed green salad and also serve as an entree with a large green salad or with grilled seafood or oven roasted meats.
