4 cups (16 ounces) shredded Cheddar cheese
1 cup chopped pecans
1/2 cup mayonnaise
1/4 cup finely chopped onion
1/8 teaspoon black pepper
1/8 teaspoon ground cayenne pepper
1/2 cup chopped pecans
Combine first cheese, pecans, mayonnaise, chopped onion, pepper, and cayenne pepper in a large mixing bowl; beat at low speed of an electric mixer until well blended. Shape mixture into a ball and roll in 1/2 cup chopped pecans.
Chill for about 2 hours. Serve with assorted crackers.
Makes one cheese ball, about 5 inches in diameter.

Cheddar Cheese Ball
2 packages (8 oz. each) cream cheese
2 cups shredded cheddar cheese
1 tablespoon chopped pimento
1 tablespoon chopped green pepper
1 tablespoon chopped onion
2 teaspoons Worchestershire sauce
1 teaspoon lemon juice
Dash of red pepper sauce
Dash of salt
Chopped pecans
Soften cream cheese to room temperature.
Combine cream cheese and cheddar cheese in food processor, and blend until smooth. Add all the remaining ingredients, except pecans, and mix well. Chill for several hours.
Shape into a ball or a log, and roll in pecans.
Serve with crackers.
