    Fried Zucchini Flowers

    6-8 large zucchini blossoms
    1 cup all purpose flour
    2 teaspoons baking powder
    1 teaspoon salt
    1 cup cold water
    2 tablespoons extra virgin olive oil
    1 tablespoon fresh-squeezed lemon juice
    1/4 cup fresh, chopped, flat parsley


    Recipe



    In a bowl, stir together flour, baking powder, salt and water to produce a light thin batter. Pre-heat oil in a skillet using medium-high heat. Then, holding each zucchini flower by its stem, dip it completely into the batter, allowing excess to drip off. Place in hot pan and fry until golden brown on all sides -- approximately 1-2 minutes. Remove from pan, place on a paper towel to drain.

    Arrange zucchini flowers on a plate and sprinkle lemon juice over them. Add a pinch of kosher salt, and garnish with the parsley as desired.

    Serves three or four people as an appetizer.
