2 tsp olive oil
1 medium onion, diced
2 garlic cloves, minced
2-10 oz pkgs frozen spinach, thawed and drained
1/2 c milk
6 oz cream cheese
3 dashes Worcestershire
3 dashes Tasbasco
3/4 c shredded mozzarella
coarse salt and ground pepper
Recipe
Preheat oven to 425 degrees. Heat oil in Dutch oven. Add onion and garlic and cook until lightly browned, about 8 minutes.
Add spinach in 2 additions. Cook until wilted. Transfer to colander to drain.
In same pot, warm milk over high heat. Whisk in cream cheese until melted, about 3 minutes. Add spinach, Worcestershire, Tabasco and 1/4 c mozzarella. Stir to combine. Season with salt and pepper. Pour into a lightly oiled 1 1/2 quart shallow baking dish; sprinkle with remaining 1/2 c mozzarella.
Bake until bubbly, 20 to 25 minutes.
