3 4oz. cans roasted whole green chilies (or home grown and roasted if desired) 3 cans have about 9 chilies.
2 eggs
1/4 cup flour
1/4 tsp. chili powder
8oz. cream cheese (softened)
1/2 cup Jack Cheese (shredded)
1 pkg. Hidden Valley Original Ranch Salad Dressing and Seasoning Mix

Preparation:
In a small bowl, mix eggs, flour and the chili powder together. Let it set awhile, and mix again until smooth. Set aside. Mix together cream cheese, Jack cheese and the dressing mix. Cut one side of chilies down the middle, open lengthwise and remove seeds. Place 1 1/2 to 2 tbs. cheese mixture in chilies and fold together sides. Dip stuffed chilies in egg/flour mixture. Deep fry at 350 degrees, until lightly browned (about 2 minutes) OR heat 1/4 inch of oil in large frying pan until hot. Fry until golden brown (about 1 minute each side). Serve hot, with a side of your favorite salsa if you wish.
