    Smoked Salmon Dressing

    4 oz cream cheese
    1 c heavy mayonnaise
    1 oz anchovies
    2 t capers
    1 T fresh lemon juice
    1 T chopped garlic
    1 t Tabasco
    2 T chopped fresh dill
    1 1/2 lbs flaked smoked salmon
    Loaf of French bread
    Diced red onion
    1 T nonpareil capers
    Parsley

    Recipe



    Take cream cheese from refrigerator and place in a
    microwave at 5 - 10 second increments until softened. Place anchovies and garlic in food processor and process until coarse. Add mayonnaise, lemon juice, capers and Tabasco to food processor and process until anchovies and garlic are small flecks. Add softened cream cheese and pulse until completely incorporated. Finally add the chopped fresh dill and pulse until completely incorporated. Slice French bread on bias 1/2" thick and 3 1/2' to 4" long and toast on a
    sheet pan in a 350° oven for 5 - 8 minutes until golden brown around the edges. To serve, place 2 c of salmon dip in the center of the plate. Garnish the salmon dip with 1 T of diced red onion and 1 T of capers. Place 8 - 10 toasted crostini around the dip and garnish with chopped parsley.
