Thai Shrimp Nachos

1 package of wonton wrappers
24 shrimp
2 leeks, sliced
2 bunches of scallions (green part only), diced
2 red peppers, julienned
Thai Sauce, recipe follows
Recipe
Cut each sheet of wonton wrappers in half diagonally. Deep fry in vegetable oil until crisp. Put aside.
Saute shrimp with leeks, scallions and peppers. Put over fried wontons. Pour over the Thai sauce.
THAI SAUCE
1 tablespoons red curry paste
1 tablespoon vegetable oil
1 cup heavy cream
2 cups coconut milk
1/2 cup sweetened condensed milk
1 tablespoon Thai fish sauce
6 Kaffir lime leaves
Saute curry paste with vegetable oil in a sauce pot for four minutes. Add remaining ingredients and whisk briskly. Bring to a simmer and reduce the mixture by one-third. Pour over the wonton/shrimp mixture.
