    1948 ORIGINAL BARBECUE SAUCE.
    *****************************
    1 medium onion, chopped
    2 cloves garlic, minced
    2 Tbl. Butter, melted
    1 large can whole tomatoes
    8 oz tomato paste
    1/2 cup celery, chopped
    1/3 cup vinegar
    1/4 cup green pepper, chopped
    2 fresh celery leaves, chopped
    1 ay leaf
    3 Tbls. Molasses
    1-1/2 tsp. salt
    2 tsp. dry mustard
    2 tsp. Tabasco sauce
    1/2 tsp. ground clove
    1/2 tsp. ground allspice
    2 slices lemon

    Saute onion and garlic in butter in a saucepan until tender. stir in remaining ingredients; bring to boil. Reduce heat and simmer, uncovered, 30 minutes; stir occasionally. Discard bay leaf and lemon slices. Process through a food processor. Use sauce for basting and as a side dish for dipping.

    ALL PURPOSE BARBECUE SAUCE.

    2 tbsp vegetable oil
    1 small onion
    2 garlic cloves, finely chopped
    1 tsp red pepper flakes, finely chopped
    1 tbsp chile powder or paprika
    1 1/2 cups ketchup
    1/2 cup amber beer or ale
    1/4 cup cider vinegar
    1/4 cup water
    1/4 cup brown sugar
    2 tbsp dijon-style mustard
    2 tbsp worcestershire sauce
    salt and ground black pepper
    tabasco sauce, optional or to taste

    In a saucepan cook onions in oil over moderate heat until tender. Stir in garlic,red pepper flakes and chile powder and cook for one minute. Add ketchup, beer, vinegar, water, brown sugar, mustard, Worcestershire sauce,salt,black pepper and tabasco sauce, stirring to combine. Partially cover and simmer until slightly thickened about 15 - 20 minutes. Taste and adjust seasoning, if necessary, with Tabasco sauce. Remove sauce from heat and allow to cool completely. Sauce can be refrigerated for 2 to 3 weeks or frozen for up to 1 month.

    BARBECUE SAUCE.
    ***************
    1/2 Cup A-1 Sauce
    2 Cups Ketchup
    1/2 Cup Brown Sugar
    1 Tbsp. Soy Sauce
    1/4 Cup Honey
    1 Tsp. Garlic Minced or 1/2 Tsp. Granulated Dry Garlic
    1 Tsp. Lemon Juice

    Blend all ingredients together.

    BEER BARBECUE SAUCE.

    2 14 oz bottles catsup
    2 tbsp black pepper
    12 oz bottle chili sauce
    5 oz bottle steak sauce
    1/2 cup prepared mustard
    1/2 cup Worcestershire sauce
    1 tsp dry mustard
    1 tbsp soy sauce
    1 tsp salt
    12 oz bottle beer
    1 1/2 cup brown sugar, firmly packed
    2 tsp minced garlic

    Combine all ingredients, except garlic, in saucepan and simmer 30 minutes over medium heat. Add minced garlic before using. Baste meat during last 15 minutes of grilling time.

    BLACKBERRY BARBECUE SAUCE.

    1/2 cup blackberry preserves
    1 1/2 cups ketchup
    1/8 cup packed brown sugar
    1/8 tsp cayenne pepper
    1/4 tsp mustard powder
    2 tbsp red wine vinegar

    Whisk together all ingredients. Brush on pork or poultry while grilling.

    BOURBON BASTING SAUCE.

    1/2 cup pineapple juice
    3 tablespoons soy sauce
    1 1/2 teaspoons ginger
    1/2 teaspoon garlic, minced
    1/4 cup bourbon

    Combine all ingredients. Use as a mop for grilling meats.

    BOURBON BUTTER BASTING SAUCE.

    1 stick salted butter
    1 cup apple cider
    1/4 cup packed dark brown sugar
    1 tbsp fresh lemon juice
    1/2 tsp salt or more as needed
    1/2 tsp black pepper
    1 cup bourbon

    Melt the butter in a medium size saucepan over medium heat. Add the cider, sugar, lemon juice,1/2 tsp salt and pepper. Increase heat to high and bring to a boil. Boil until slightly thickened, about 5 minutes. Remove from heat and stir in the bourbon. Taste for seasoning, adding salt as needed. Store in fridge for up to 1 week. Makes 2 1/2 cups

    BOURBON ORANGE BARBECUE SAUCE.
    ******************************
    1/4 cup vegetable oil
    1 large onion,minced
    2/3 cup bourbon
    2/3 cup ketchup
    1/2 cup cider vinegar
    1/2 cup fresh orange juice
    1/2 cup real maple syrup
    1/3 cup dark molasses
    2 tbsp worscetershire sauce
    salt and pepper

    Heat oil in a large saucepan. Add onions and cook for about 10 minutes or until golden. Add remaining ingredients and bring to a simmer, stirring frequently.
    Reduce heat to low and cook until mixture thickens, about 40 minutes. Use as a glaze or simmer until very thick and use as a serving sauce for pork or chicken. Makes about 1 1/2 cups.

    CHICKEN BARBECUE SAUCE.
    ***********************
    1c. oil
    2c. vinegar
    1Tbsp. lemon juice
    1Tbsp. accent
    2tsp. poultry seasoning
    4Tbsp. salt
    1tsp. garlic salt
    1tsp. pepper

    Mix all ingredients together and soak overnight in the refrigerator. The next morning start your smoker to heat up, using hickory chips. Once smoker is warmed a bit, place chicken in smoker and let smoke, applying the sauce often. Chicken usually takes 3 to 4 hours, depending on how you like your chicken. Though continually brush the chicken with sauce for the best flavor. Also great for grilling, use directions as above, usually takes about the same amount of time with grilling. Be sure to continually brush with sauce on grill also

    COCA COLA BARBECUE SAUCE.
    *************************
    1Cup Coke
    1Cup Ketchup
    1/2Cup Worcestershire Sauce
    1tsp Liquid Smoke
    3TBS A1 Steak Sauce
    1tsp Onion Flakes
    1tsp Garlic Flakes
    1/2tsp Pepper

    Combine all and bring to boil over medium heat. Reduce to simmer and reduce 25%

    DILL LEMON BASTING SAUCE.
    *************************
    1/2 cup lemon juice
    1/2 stick(1/4 cup) butter
    1 tbsp chopped fresh dill, or 1 tsp dried dill weed
    1/2 tsp salt
    1/4 tsp fresh ground black pepper

    In a small saucepan combine lemon juice, butter, dill, salt and pepper. Heat to bubbling. Cool to lukewarm before using. Use on chicken or fish.

    FLORIDA BARBECUE SAUCE.

    2 cups butter or margarine
    1 cup cider vinegar
    1 cup ketchup
    1(5-6 oz) jar prepared horseradish
    juice of 6 limes or lemons
    1 tsp salt
    1 tbsp Worcestershire sauce
    1 tsp hot pepper sauce

    In a medium size saucepan melt margarine or butter slowly, Add vinegar, ketchup, horseradish, lime or lemon juice, salt and Worcestershire and pepper sauces. Simmer uncovered 20-25 minutes to blend flavors. Use as a basting sauce for pork, chicken or other meats

    GARY'S CAROLINA BARBECUE SAUCE.

    1 c. cider vinegar
    1 c. white vinegar
    3/4 c. ketchup
    1/2 tbls. sugar
    1 1/2 tsp. black pepper
    2 tsp. salt
    3/4 tsp. cayenne pepper
    1/2 c. Worcestershire sauce

    Combine all ingredients in a non-reactive saucepan and heat over medium heat for 10 minutes. Cool then store in refrigerator. Use as desired on pulled pork, beef ribs, spareribs, etc. Use in conjunction with Gary's Super Rub.

    GO WITH EVERYTHING
    SAUCE FOR GRILLING.

    3/4 cup powder sugar
    1 tbsp Worcestershire sauce
    1/4 tsp tabasco sauce
    6 tbsp molasses
    1/4 tsp garlic salt
    1/2 tsp liquid barbecue smoke

    Mix all ingredients in a saucepan. Cook and stir over medium heat until boiling. Keep warm on low heat until ready to serve. Pour over grilled meat or poultry. Chicken, ribs, pork or beef

    HAWAIIAN ONO BBQ. SAUCE.

    1 small bottle of ketchup
    1 cup pancake syrup (that's right)
    1/3 cup shoyu

    Mix all this one time. This is good for BBQ, using as a dip for won-tons, or even chicken wings.

    HONEY BARBECUE SAUCE.
    *********************
    1 1/2 cups ketchup
    1/3 cup white vinegar
    1/8 cup molasses
    1/8 cup corn syrup
    1/4 cup honey
    1 teaspoon liquid smoke flavoring
    1/2 teaspoon salt
    1/4 teaspoon garlic powder
    1/8 teaspoon onion powder
    1 teaspoon MSG
    1/4 teaspoon of chili powder

    In a sauce pan combine all of the above and bring to a simmer. Simmer for 5 minutes and keep warm.

    HONEY BARBECUE SAUCE FOR RIBS.
    ******************************
    90ml (6tbsp) tomato ketchup
    45ml (3tbsp) clear honey
    30ml (2tbsp) red wine vinegar
    30ml (2tbsp) mustard
    salt and freshly ground black pepper

    Mix together all the ingredients and brush over prepared ribs. Baste the ribs during cooking with any remaining sauce. Enough for 1.8kg (4lb) pork spare ribs. Serves 8

    HONEY BASTING SAUCE.

    3/4 cup A.1. steak sauce
    2 tbsp honey
    2 tbsp dry sherry
    1 tsp cornstarch
    1/4 tsp dried basil

    In a small saucepan, blend steak sauce, honey, sherry, cornstarch and basil. Heat to boiling, stir constantly.
    Boil 1 minute, remove from heat and cool slightly.
    Use as a basting sauce for beef, poultry or pork.

    HOT GEORGIA BARBECUE SAUCE.

    1/2 c Lemon juice
    1/4 c Ketchup
    1 tb Brown sugar
    1 ts Dry mustard
    1/2 ts Pepper
    1/2 ts Onion powder
    1 ts Tabasco sauce
    1/3 c Vinegar
    1/4 c Water
    1 ts Salt
    1 ts Paprika
    1/2 ts Cayenne
    1/8 ts Garlic powder
    2 tb Butter

    Combine all ingredients in a saucepan. Heat to boiling point. Use for BBQing chicken, pork, veal, beef or lamb.

    HOT PEPPER BARBECUE SAUCE.

    1/4 cup honey
    1/4 cup diced green bell pepper
    1/4 cup diced red bell pepper
    1/4 cup diced yellow bell pepper
    1 small onion, finely chopped
    1 jalapeno chili, chopped
    1 1/2 cups ketchup
    3/4 cup cider vinegar, or more to taste
    1/2 cup 7-Up or Sprite, or more as needed
    2 tbsp dark brown sugar, or more to taste
    2 tbsp apple juice
    1 tsp liquid smoke
    1/2 tsp freshly ground black pepper
    Coarse salt to taste

    Pour the honey into a heavy saucepan. Add
    the peppers, onion, and jalapeno and saute over medium
    heat until the peppers are soft and the onion translucent, for about 5 minutes. Stir in the remaining ingredients and simmer the sauce, uncovered, until thick and richly flavored for 15 minutes.Transfer the sauce to a blender and puree until smooth. Correct the seasoning, adding salt, vinegar, or brown sugar if needed; the sauce should be sweet, smoky, and tangy. If the sauce is too thick, thin with a little more 7-Up. Use right awayor transfer to a large jar, cover, cool to room temperature, and refrigerate Makes 2 cups.

    LEMON BARBECUE SAUCE.

    1/4 cup vegetable oil
    2 tbsp chopped onion
    1/4 cup minced celery
    1/4 cup lemon juice
    1/4 cup tomato puree
    1 tbsp Worcestershire sauce
    1 clove minced garlic
    2 tbsp (packed) brown sugar
    1/2 tsp salt
    1/4 tsp pepper

    Place oil in a skillet, add onion and celery. Saute until tender over medium heat. Add remaining ingredients, simmer for 10 minutes.

    LOUISIANA BARBECUE SAUCE.

    1 cup each olive and vegetable oil
    4 large onions finely chopped
    1 large green pepper, seeded and diced
    1 rib of celery finely chopped
    1(8 oz) can tomato sauce
    3/4 cup ketchup
    1 tsp prepared mustard
    1 tbsp vinegar
    3-4 drops liquid smoke

    Heat the oils in a saucepan. Add onions, green pepper and celery and cook and cook until onions are lightly browned. Stir in tomato sauce, ketchup, mustard, vinegar and liquid smoke. Simmer 10-15 minutes. Makes 4 1/2 cups

    MAPLE BARBECUE SAUCE.

    1 cup maple syrup
    1 cup ketchup
    1 cup finely chopped onion
    1/4 cup firm packed brown sugar
    1/4 cup apple cinder vinegar
    1/4 cup lemon juice
    1/4 cup water
    2 tbsp olive oil
    2 tbsp worcestershire sauce
    2 tsp finely chopped garlic
    2 tsp grated lemon rind
    1 tsp salt
    1/4 tsp hot sauce

    Combine all ingredients in a saucepan. Bring to a boil,reduce heat and simmer 20 minutes. Cool. Pour mixture into a blender and blend until smooth.

    MOLASSES BARBECUE SAUCE.

    1 can(10-2/3 ounces)
    condensed tomato soup,undiluted
    1 8 oz can tomato sauce
    1 cup molasses
    1/2 cup cinder vinegar
    1/4 cup veg oil
    1 tbsp dried minced onion
    1 tbsp grated orange peel
    1 tbsp worcestershire sauce
    2 tsp ground mustard
    1 1/2 tsp paprika
    1 tsp seasoned salt
    1/2 tsp pepper
    1/4 tsp garlic powder

    In a saucepan combine all ingredients.Bring to a boil.Reduce heat,simmer uncovered for 20 minutes.

    MOPPING SAUCE.

    1(14 oz) can beef broth
    14 oz water
    1 cup Worcestershire sauce
    1/2 cup brown mustard
    2/3 cup apple cider vinegar
    1/2 cup veg oil
    1/4 cup salt
    1/4 cup garlic powder
    3 tbsp black pepper.

    Combine all ingredients in a saucepan and simmer about 15 minutes. Brush on meat every 20-30 min

    MOROCCAN BARBECUE SAUCE.

    1/2 cup extra virgin olive oil
    2 T fresh lemon juice
    1 T ground cumin
    1/2 tsp salt
    Large pinch of ground black pepper
    1 T paprika
    3 T minced fresh coriander
    1/2 tsp dried oregano
    1/2 tsp ginger powder

    Baste over your favorite meat while grilling.

    MUSTARD BARBECUE SAUCE.

    1 cup chicken or beef broth
    1 cup prepared mustard
    1/2 cup red wine vinegar or cider vinegar
    1/3 cup packed brown sugar
    3 tbsp butter or margarine
    2 tbsp Worcestershire sauce
    2 tbsp tomato paste
    2 tbsp molasses
    1 tbsp garlic powder
    1 tbsp onion powder
    1-1/2 tsp cayenne pepper
    1 tsp salt
    1/4 tsp pepper

    Combine all ingredients in a large saucepan. Bring to a boil. Reduce heat. Simmer uncovered for 15-20 minutes. Remove from heat. Cool. makes 2 1/3 cups

    ORANGE PEEL BARBECUE SAUCE.

    1 tbsp slivered or grated dried orange peel
    1/2 cup each-ketchup, soy sauce and orange juice
    1 tbsp honey
    2 tbsp veg oil
    1 tsp ground black pepper

    Combine all ingredients. Use as a marinating or basting sauce for pork, chicken or beef Makes 1/3 cup

    PEPPERY BARBECUE SAUCE.

    2 cups firm packed brown sugar
    2 tbsp pepper
    1-1 1/2 tsp salt
    4 garlic cloves,minced
    4 cups ketchup
    1 cup white vinegar
    2 tbsp veg oil
    2 tbsp mustard
    2 tbsp worcestershire sauce
    2 tbsp hot sauce

    Stir together all ingredients.Makes 6 cups.

    PIEDMONT AREA MUSTARD SAUCE.

    1 1/2 cups prepared mustard
    1/2 cup packed brown sugar
    3/4 cup cider vinegar
    1/2 cup beer
    1 tablespoon chili powder
    1 teaspoon freshly ground black pepper
    1 teaspoon freshly ground white pepper
    1/2 teaspoon ground cayenne pepper
    1 1/2 teaspoons Worcestershire sauce
    2 tablespoons butter, room temperature
    1 1/2 teaspoons liquid smoke flavoring
    1 teaspoon Louisiana-style hot sauce

    In a heavy non-reactive saucepan, combine mustard, brown sugar, vinegar and beer. Season with chili powder, black, white and cayenne pepper. Bring to a simmer over medium high heat. DO NOT BOIL, or you will scorch the sugar and peppers. Reduce heat and simmer for about 20 minutes. Mix in the Worcestershire sauce, butter, and liquid smoke. Simmer for another 15 to 20 minutes. Add a few dashes of the hot sauce to taste. Pour into an airtight jar and refrigerate over night to allow flavors to blend

    PORK CHOP BARBECUE SAUCE.
    *************************
    1/2 cup onion, chopped fine
    1 can tomato paste
    3/4 cup water
    4 tbsp wine vinegar
    2 tbsp brown sugar
    2 tbsp Worcestershire sauce
    2 tbsp ketchup
    1 tsp salt
    1 tsp paprika
    1 tsp chili powder
    dash black pepper
    dash ground cinnamon (opt.)
    dash ground cloves (opt.)

    Combine all ingredients and simmer until well blended. Pour over 6 pork chops and bake at 300 for one hour.

    SIMPLE BARBECUE SAUCE.

    3/4 cup ketchup (187 ml)
    2 tablespoons cider vinegar
    1/2 cup maple syrup (125 ml)
    3 tablespoons Dijon mustard
    1/4 cup vegetable oil (62 ml)
    2 cloves of garlic-minced
    3 tsp. bourbon
    1 teaspoon of black pepper

    Mix all ingredients together in mixing bowl. Cover and keep refrigerated until use. For best flavor results prepare sauce two to three hours ahead of time.
    Serving: Makes approximately 2 1/2 cups.

    SPICY BASTING SAUCE.

    1 cup orange juice
    1/2 cup lemon juice
    1/4 cup soy sauce
    1/4 cup brown sugar, packed
    1 tsp curry powder
    1 tsp black pepper
    1/2 tsp ginger
    1/4 tsp mace

    Combine all ingredients thoroughly. Use to baste chicken or turkey during last 30 minutes of cooking. Makes 2 cups

    SPICY INDIAN BARBECUE SAUCE.

    1 medium onion thinly sliced
    and separated into rings
    2 cloves garlic,minced
    1/2 tsp grated gingerroot
    1 tbsp cooking oil
    1 tsp curry powder
    1/2 cup bottled barbecue sauce
    1 tsp paprika
    1/2 tsp salt
    1/4-1/2 tsp hot pepper sauce
    1/2 cup plain low fat yogurt

    In a 1 quat saucepan cook onion,garlic and gingerroot in hot oil till onion is golden brown. Stir in curry powder,cook for 1 minute more.Add barbecue sauce,paprika,salt and pepper sauce. Bring to a boil,reduce heat and simmer uncovered for 5 minutes.Remove from heat,cool slightly. Stir in yogurt.Place sauce in a blender cover and blend until smooth.

    SPICY SOUTHWESTERN BARBECUE SAUCE.

    6 cloves garlic
    2 cups ketchup
    2 stalks celery
    1 cup water
    1/2 cup onion, chopped
    1/2 cup brown sugar, firmly packed
    1/2 cup butter or margarine
    1/2 cup worcestershire sauce
    1/2 cup cider vinegar
    3 tbsp chili powder
    2 tsp instant coffee granules
    2 tsp dried crushed red pepper
    1/2 tsp salt
    1/2 tsp ground cloves

    Bake garlic in a small baking pan at 350 degrees F for 20 to 30 minutes or until lightly Cool and peel. Combine garlic and remaining ingredients in a saucepan. Bring to a boil; reduce heat, and simmer 20 min. Cool.Pour mixture into container of a blender; process until smooth, stopping once to scrape down sides. Recommended with chicken.

    SPICY TEXAS BARBECUE SAUCE.

    1 cup catsup
    1/4 cup lime juice
    1 tbsp vegetable oil
    1-1/2 cups onion, chopped, 3 medium
    2 cloves garlic,finely chopped
    12 ounces beer
    1/2 cup brown sugar, firmly packed
    2 tbsp ground red chiles, To
    Taste
    1 tbsp worcestershire sauce
    2 jalapeno chiles
    12 ounces tomato paste

    * Jalapeno chiles should be seeded and finely chopped.
    Heat all ingredients to boiling in a 2 quart saucepan; reduce heat to low cover and simmer 1 hour, stirring occasionally. Makes about 5 cups of sauce

    SUGAR FREE BARBECUE SAUCE.

    1/2cup Ketchup
    1/2cup Wine
    1TBS Worcestershire sauce
    2 Cloves garlic, crushed
    1/2tsp Chili powder
    3 dashes hot sauce

    SUPER BARBECUE SAUCE.

    1 Cup Coca-Cola
    2 Cups Worchestershire sauce
    1-1/4 cups tomato catsup
    1/4 pound butter
    1 tablespoon salt
    4 teaspoons sugar
    1 to 2 tablespoons freshly ground black pepper

    Combine all of the ingredients in a heavy pot or kettle and bring to a boil over low heat. Cook, stirring frequently, at least 30 minutes. Brush on foods as they are grilled.

    SWEET AND SOUR BASTING SAUCE.

    2TBS Salad oil
    1/3 cup Brown sugar
    1tsp Salt
    1/2 cup Wine Vinegar
    1/2 pepper (Your a Choice)
    1tsp Soy Sauce
    1 Can (6oz) pineapple juice concentrate
    1 Clove garlic
    1/2 jar (2oz) pimientos
    1 can pineapple chunks

    Put all ingredients into blender. Process at mix until thoroughly blended. Use for basting meats while cooking.

    TENNESSEE BARBECUE SAUCE.

    2 tbsp Jack Daniel's whiskey
    1 tsp liquid smoke

    2 drops hot pepper sauce

    Saute onion and garlic in veg oil until tender. Stir in remaining ingredients and bring to a boil over medium heat. Reduce heat and simmer for 10 minutes. Makes about 2 cups. Good for chicken pork and beef.

    TENNESSEE RIB SAUCE.
    ********************
    1/2 cup ketchup
    1/3 cup light molasses
    1 tbsp light brown sugar
    2 tbsp orange juice
    1 tsp grated orange zest
    (this and the orange juice are very important to the over all flavor)
    1 medium onion, finely chopped
    1 clove garlic, minced
    1 tsp prepared mustard
    1 tsp Worcestershire sauce
    1/8 tsp red pepper flakes
    1/4 cup bourbon

    Combine all the following ingredients in a saucepan. Bring to a slow boil and simmer for for 15 minutes. Use to baste ribs during cooking.

    TEXAN BARBECUE SAUCE.
    *********************
    4 sticks butter, melted
    red pepper-to taste
    Salt and pepper-to taste
    Juice of 1 lemon
    1 C. white vinegar
    3 tsp. prepared mustard
    1/2 bottle of Worcestershire sauce
    1 small bottle of catsup
    1/4 bottle of Tabasco sauce
    1/2 bottle of your favorite steak sauce.

    Mix all these ingredients well. Simmer for 15 minutes in a pot. Baste your meats while grilling every 10 minutes

    WESTERN BARBECUE SAUCE.

    1/4 cup soy sauce
    1/4 cup ketchup
    1/2 cup dry red wine
    1/4 cup olive oil
    1 small onion, chopped
    1 tsp chili powder
    1 tsp black pepper
    1 clove garlic, minced

    Combine all ingredients in saucepan. Mix well and bring to a boil. Keep warm and brush on meat while grilling

    WHISKEY BARBECUE GLAZE.

    1 tbsp onion powder
    1 tbsp garlic Powder
    1 tbsp Tabasco sauce
    1 cup pineapple juice
    1/2 cup whiskey
    2 cups brown sugar
    2 Beef bullion cubes
    4 tbsp Worcestershire sauce

    Combine all ingredients in a small saucepan.
    Bring to a boil, reduce heat and simmer for 15 minutes.
    Allow to cool and use as a sauce on any grilled meat.
