List of Ingredients
ONIONS:
1 large red onion
1 large white Vidalia onion
1 bottle BBQ sauce
Salt
Coarse ground black pepper
2 feet tin foil
Recipe
Slice the onions into an even number of slices. Lay them down in alternating slices onto the center of the foil. Salt and pepper to taste (I use 3 large pinches of sea salt and a generous grinding of coarse ground black pepper.)
Empty the entire contents of the BBQ sauce onto the tops of the onions. Fold up the edges of the foil to encase the onions and sauce. Set aside.
BURGERS:
2.5—3 pounds 85% lean ground beef
3 tablespoons Worcestershire sauce
2 tablespoons garlic powder
1 tablespoon Tabasco Chipotle Pepper Sauce
1 large egg
1/2 cup Cognac
1/2 stick butter
6 fresh hard round burger rolls
1/2 pound Maytag blue cheese
12 pieces fresh cooked bacon
PREPARE THE BURGER:
In a large mixing bowl, combine the first six (6) ingredients. Work the burger meat with your hands until completely mixed. Separate into 6 evenly sized balls of burger meat. Pat each burger down until round and about 1 inch thick. Place on a platter and using your fingers, push in the center to make a small hole in the center top side of the patty, about 2 inches in diameter. The thickness of the center of the patty should be about 1/2 inch while the edges should be about 1 inch thick.
Repeat for all 6 patties. Set aside, covered in the refrigerator.
PREHEAT THE GRILL:
Charcoal grills work best for these burgers, as the Cognac comes out of the burger and flames up the charcoal to make a “flame-broiled” patty, crusty on the outside and juicy on the inside.
START THE ONIONS:
When the grill has been brought up to temperature, place the onions on the grill and cover the grill. Total cook time for the onions should be 20 to 30 minutes.
PREPARE THE BUNS:
Melt the butter. Slice the buns in half and brush the inside with melted butter.
COOK THE BURGERS:
When the onions are 10 minutes to completion, remove the grill cover and place the burgers on the grill top side (hole side) down. Grill the burgers with the top off for 5 minutes.Flip the burgers and immediately fill the holes in the center with blue cheese. Close the top of the grill and cook for an additional 5 minutes (or until burgers are cooked as desired). Remove the burgers to a platter for serving.
BROWN THE BUNS:
Place the buns face down on the grill to brown. Monitor the buns constantly as they can turn from golden brown to black in seconds. Remove the buns and plate for serving. Remove the onions.
ASSEMBLE AND ENJOY!
Open the top of the foil and tear it back along the center where it was joined. (Be careful, as the foil will be hot. The escaping gases from the inside of the foil will be very hot as well.)
Place the bottom of a bun on a plate. Place a burger on top of the bottom bun. Place two (2) pieces of bacon on top of the burger and cheese. Put as many onions on top of the burger as desired. Place the top bun on the best burger ever, and enjoy!
Please be advised, this is not a “neat and tidy” burger. Please eat with a generous napkin or paper towels.
