List of Ingredients
Pickled Vegetables:
2 tablespoons sugar
1/3 cup Sutter Home Sauvignon Blanc or Gewurztraminer
1/3 cup rice wine vinegar
1/4 cup water
1 medium sweet onion, thinly sliced
1 small English cucumber, thinly sliced
1 1/2 cups pre-shredded carrots
1 cup daikon radish or jicama, peeled and shredded
Fiery Mayo:
1/2 cup plus 2 tablespoons mayonnaise, regular or reduced-fat
2 teaspoons Tabasco Chipotle Pepper Sauce, or to taste
1 teaspoon Oriental sesame oil
Burgers:
2 pounds ground pork
3 tablespoons Sutter Home Sauvignon Blanc or Gewurztraminer
1 1/2 tablespoons Thai fish sauce
2 tablespoons minced shallots
2 teaspoons minced garlic
2 teaspoons minced ginger
1 1/2 teaspoons Chinese five-spice powder
Peanut (or vegetable) oil, for brushing grill
6 Vietnamese or French rolls, split
3 cups mesclun or mixed salad greens
1/2 cup snipped cilantro leaves
Recipe
Preheat grill to medium hot flame.
For Pickled Vegetables: Whisk together sugar, wine, vinegar, and water. Add vegetables, tossing to coat. Cover and chill until serving.
For Fiery Mayo: Combine all mayo ingredients in small bowl. Chill until serving.
For Burgers: Combine ground pork, Sauvignon Blanc, and remaining burger ingredients; mix thoroughly. Shape into 6 patties to fit rolls.
Brush grill with oil; grill patties until browned on the bottom, about 4 minutes. Turn patties and grill until just done, 5 to 7 minutes longer.
Spread cut sides of rolls with Fiery Aioli. Layer roll bottoms with mesclun, burger, and pickled vegetables. Sprinkle with cilantro leaves. Cover with roll tops.
Serve with Sutter Home Sauvignon Blanc or Gewurztraminer.
