Grilled Buffalo Chicken Burger

List of Ingredients
8 boneless and skinless chicken thighs, trimmed of all fat
2 tablespoons Tabasco hot sauce
10 sprigs fresh cilantro
1 tablespoon fresh lime juice
1/2 teaspoon cayenne pepper
2 scallions
2 tablespoons chopped onion
1 egg
Sea salt and fresh ground black pepper to taste
Grind all the above in a food processor or meat grinder.
If using food processor, add egg last and pulse blend for 1 minute.
And for the meat grinder, add egg to bowl with the ground ingredients and blend in well.
Form into 6 even and flat patties and let stand for 1 1/2 hours under refrigeration to allow the meat to soak up the flavors and tenderize.
Bleu Cheese Dressing
3/4 cup plain yogurt
1/2 cup sour cream
4 ounces good-quality bleu cheese (Saga or Maytag), broken into crumbles
Fresh ground black pepper to taste
1 stalk celery, de-stringed and minced very finely
Blend all the above and let stand under refrigeration for 1 hour or until ready to grill.
Preparation for Grilling
6 Cornduster Kaisers (a potato roll with cornmeal baked into the top)
6 leafs romaine lettuce
6 very thin slices red vine-ripened tomato
6 very thin slices yellow vine-ripened tomato
1 California avocado, sliced into 12 equal pieces with 2 pieces per burger

Grilling
Cook the chicken burgers until well done or until the internal temperature has reached 180 degrees F, approximately 10 minutes.
The thigh meat is incredibly tender and juicy and the spices make it taste just like the classic Buffalo wing but without the hassle of having to eat it off the bone.
Spread each Kaiser roll with a generous amount of the Bleu Cheese Dressing and top with the romaine and a slice each of the red and yellow tomatoes and the avocado slices.
