    List of Ingredients




    BURGER MIXTURE
    1.5 pounds ground beef, 80% lean shank and 20% beef fat
    2 teaspoons kosher salt
    1/4 teaspoon ground black pepper

    CHIPOTLE AVOCADO AIOLI
    2 ripe Haas avocados
    2 teaspoons fresh lime juice
    1/4 teaspoon kosher salt
    1 teaspoon Tabasco Chipotle Pepper Sauce
    1/2 cup Kraft Signature Mayonnaise, or comparable

    1 sweet onion, such as Maui, thin sliced, separated into rings and grilled
    1 beefsteak tomato, sliced into six slices, seeds removed, marked on grill
    6 Kaiser rolls
    2 tablespoons olive oil
    6 one-ounce slices Manchego cheese
    2 ounces daikon radish sprouts


    Recipe



    1. Prepare Burger Mixture

    Add beef, salt, and pepper to a mixing bowl and work together until ingredients are evenly mixed. Weigh out 1/4 pound portions and form into patties. Put aside until ready to grill.

    2. Prepare Avocado Aioli

    Remove avocado flesh and mix with lime juice, salt, and Tabasco. Mash into a chunky spread.

    Place in a small bowl and spread the surface with the mayonnaise to cover. Set aside under refrigeration until ready to serve.

    3. Preheat Grill

    Preheat grill until grilling temperature is reached. Grill onions until soft and caramelized and mark tomatoes. Set aside.

    4. Grill Buns and Burgers

    Lightly brush each piece of Kaiser roll with olive oil and place on grill until surface is toasted. Set aside until burgers are grilled.

    Place burgers on grill and cook for approximately 2.5 minutes. Turn ninety degrees and grill for another 2.5 minutes. Turn over and grill for 2.5 minutes. Turn ninety degrees and grill another 2.5 minutes or until burgers are cooked to slightly pink. Add cheese to burgers during last 2 minutes to heat. Remove to a tray.

    5. Assemble Burgers

    Stir mayonnaise into avocado aioli and mix. Place approximately one tablespoon of aioli on the bottom of each roll. Add burgers with cheese. Top each burger with a few onion rings, one slice of tomato, and sprouts. Evenly distribute remainder of aioli among burgers. Place the top of roll on each burger and serve.

    Ideally enjoyed accompanied with a Sutter Home Cabernet Sauvignon or Syrah.

    Makes 6 burgers
