List of Ingredients
8 cups (about 12) green sweet peppers, minced
8 cups red sweet peppers, minced
1 hot pepper
3 cups onions, chopped
2 cups vinegar
1 cup sugar
1 tablespoon salt
1 tablespoon mixed pickling spices
Recipe
Wash, core, seed and mince peppers. Place them in a large sauce pan with onions. Cover with boiling water and let stand 5 minutes. Drain. Cover again with boiling water and let stand 10 minutes, drain.
Simmer vinegar, sugar, salt and spices (tied in a bag) 15 minutes. Add drained vegetables and simmer 10 minutes. Remove spice bag; bring relish to a boil and pour into hot jars, leaving 1/4 inch headspace. Adjust lids. Process 10 minutes in boiling water bath.
Makes about 6 half pints.
