Cheaters' Chili

2 tablespoons olive oil
1 1/2 cups minced onion
1 medium carrot, diced
1 medium rib celery, diced
2 tablespoons chili powder
2 teaspoons ground cumin
3/4 teaspoon salt
1 tablespoon cider vinegar
1 tablespoon minced garlic
1 small bell pepper (any color) seeded and diced
3 cans (15 ounces each) red kidney beans, rinsed and drained (about 5 cups cooked kidney beans)
2 cups tomato juice
Freshly ground black pepper
Toppings such as sour cream, grated cheddar cheese, salsa, minced cilantro and/or parsley (optional)
Recipe
Heat olive oil in Dutch oven or soup pot over medium heat. Add onion, carrot, celery, chili powder, cumin and salt, and saute 5 minutes, or until onion is translucent. Add vinegar, garlic and bell pepper, and saute 5 minutes longer. Stir in beans and tomato juice. Cover and cook over very low heat 20 minutes, stirring intermittently. Add black pepper to taste and serve hot with toppings of your choice. Makes about 6 servings.
