    1 lb. (500g) hot or sweet Italian sausages (turkey or pork)
    2 Tbsp. (25ml) vegetable oil
    1 large onion, chopped
    8 large garlic cloves, minced or chopped
    2 lbs. extra-lean ground beef
    2 - 28 oz./796ml. cans Italian whole tomatoes roughly chopped or
    fresh tomatoes, diced
    1 - 19 oz./540ml. can button mushrooms, sliced (or fresh)
    1 yellow, sweet Hungarian pepper, chopped
    1 large blush pepper, chopped (or red, yellow or green bell peppers)
    1 jalapeño pepper
    2 or 3 stalks celery, chopped
    2 - 28 oz./796ml. cans kidney beans
    1 - 19 oz./540ml. can Quebec Maple Syrup Pork & Beans
    2 - 14 oz./398ml. cans Hunts Tomato Sauce
    1 1/4 cups Merlot or other fruity wine
    2 Tbsp. brown sugar
    2 Tbsp. Worcestershire sauce
    2 Tbsp. Tabasco sauce
    1 Tbsp. salt
    1 tsp. black pepper
    1 tsp. dried oregano leaves
    1 Tbsp. ground cumin
    3 Thai Bird Chilies, chopped
    2 Tbsp. hot chili powder
    2 medium bay leaves
    Grated cheddar cheese
    Cilantro, chopped

    Recipe



    Remove sausages from their casings or cut into bite-size pieces. Place in large stock pot or Dutch oven with a little oil. Sauté until well browned. Remove and drain off fat. Add remaining oil and gently cook onions and celery until soft. Add ground beef and brown well. Add
    garlic and fry for 1 minute. Stir in remaining ingredients. Cover and bake at 350°F. (180°C)
    for 1 1/2 to 2 hours.
