General Tso's Chicken

For the garlic sauce
4 tablespoons sugar
4 tablespoons white vinegar
2 tablespoons ketchup
1/2 teaspoon garlic, minced
1/4 teaspoon fresh ginger, minced
2 teaspoons dark soy sauce
Dash salt
Dash white pepper
1 cup water
1 teaspoon cornstarch
Mix all ingredients together, except the cornstarch, and put aside.
FOR THE MEAT
1 1/2 pounds chicken thigh meat
1/2 egg, beaten
1/2 teaspoon vegetable oil
4 tablespoons cornstarch
Dash salt and white pepper
Water
Sesame oil to taste
1/4 teaspoon hot chili peppers, minced
Recipe
Chop chicken into slices of 1 to 2 inches. Mix with beaten egg and 1/2 teaspoon of oil. Toss with cornstarch, salt and pepper until it is mixed in. Add a little water to make the chicken and batter creamy. Deep fry in vegetable oil (heated to 350 degrees). Fry until crispy.
Drain chicken from oil and set aside. Heat wok and add in garlic sauce. Stir and mix in the 1 teaspoon of cornstarch to thicken. Mix in chicken. Add chili peppers and a bit of sesame oil to taste.
Serve with steamed broccoli crowns and rice.
