    Cajun Scallops w/Red Pepper Pesto

    1 jar roasted red peppers (in water)
    2 lrg. shallots
    2 garlic cloves
    1 T. dry sherry
    2 T. fresh basil
    ¼ cup olive oil
    1 lb. sea scallops
    4 T. cajun spice
    1 T. paprika
    1 tsp. dried thyme
    ½ lemon

    Recipe



    Drain red peppers. Put roasted red peppers and next 4 ingredients (shallots - basil) in blender and puree. Slowly add olive oil. Transfer mixture to sauce pan, cover, and warm over lowest heat.

    Rinse & pat dry scallops. Dust with cajun spice, paprika & thyme. Heat a heavy duty frying pan over high heat. Spray pan w/vegetable spray. Add prepared scallops and sear them for 2 minutes on each side. Reduce heat to low and squeeze lemon over scallops. Cover and cook for 5 minutes, until scallops are firm.

    Pour red pepper pesto over scallops and serve w/pasta or rice.

    Serves 4
