    Falafel Coated Shrimp

    1 lg egg white
    ¾ c dry falafel mix
    6 tbl olive oil
    1 lb peeled and deveined medium shrimp
    Yogurt dipping sauce

    Recipe



    In medium bowl, whish egg white until slightly frothy. Add a quarter of the shrimp; toss to coat. Lift shrimp, shaking off excess egg white. Transfer to a plate. Sprinkle with 3 tbl falafel mix and toss to coat well. Transfer to a clean plate. Repeat to coat another quarter of the shrimp.
    Heat 3 tbl oil in a large nonstick skillet over medium heat. Add coated shrimp; cook until golden brown, turning once with tongs, 3 to 4 minutes total. Remove from heat. Transfer shrimp to a paper towel lined plate. Wipe skillet with paper towel.
    Coat remaining shrimp in 2 batches as above. Cook as above.
    Season with salt and pepper. Serve with sauce.

    Yogurt Dipping Sauce
    In a small bowl, stir together ¾ c plain yogurt, 1 tbl fresh lemon juice, 1 small minced garlic clove, and 2 tbl finely chopped fresh parsley; season with coarse salt and ground pepper
