    Grecian Shrimp

    List of Ingredients

    1 teaspoon minced shallots
    1 teaspoon minced garlic
    1 tablespoon olive oil
    12 16-20 count shrimp ( peeled and deveined)
    1/4 cup white wine
    1 tablespoon lemon juice
    1 tablespoon butter
    2 ounces feta cheese crumbles
    2 tablespoons sundried tomatoes (julienned)
    1/4 cup diced tomatoes
    1 tablespoon olive oil
    1 1/2 cups cooked orzo pasta
    1 tablespoon each fresh basil ,chives and parsley ( minced)
    salt and pepper to taste



    Recipe

    Heat first tablespoon of oil in sauté pan and add shallot and garlic. Toss until it sweats and add shrimp. Cook until translucent ( tossing lightly) and just firm to touch. Add wine and lemon juice and bring to a boil. Remove shrimp. In a second sauté pan, heat orzo in second tablespoon of oil until just warm and season with salt and pepper. After removing shrimp, add butter, cheese, tomatoes and herbs. Place shrimp back in sauce and serve over warmed orzo.
