4 lb beef or pork shoulder or butt roast
4 tbl olive oil
4 lg cloves garlic
1 tbl kosher salt
1 c dry red or white wine, water or broth
2 lg onions, sliced 3/4" thick
2 bell peppers, sliced 3/4" thick
2 dozen tortillas, warmedRecipe
Rinse meat and trim of excess fat. Pat dry. Heat 2 tbl oil in dutch oven or skillet over medium high heat. Add meat and brown all over, abt 10 minutes. With mortar and pestle, grind 3 cloves garlic into paste with the salt. Rub paste all over browned meat. Place meat in slow cooker and add wine. Cover and set cooker at lowest setting. Cook for 8 to 10 hrs. Discard any fat and shred meat with a fork.
Heat remaining 2 tbl oil in large skillet over medium heat. Saute onions and peppers until soft, 8 to 10 minutes. Add meat and remaining garlic; cook until lightly browned.
Serve with tortillas and salsa.
