    Edmund Colgan's Swiss Steak

    olive oil
    4 lb chuck steak, bone in
    1/2 to 3/4 c flour
    1 1/2 white onions, sliced
    1/2 bottle sherry
    1/2 jalapeno, seeded
    4 cloves garlice, sliced
    1 heaping tbl tomato paste
    1/2 tsp canned chipotle

    Pat the steak dry with paper towel and season well with salt and pepper. Push the flour into both sides of the steak, using the heel of your hand. Coat a large, lidded Dutch oven with oil and brown the steak on both sides.
    Transfer steak to a plate; add onion, garlic and jalapeno. Cook until just golden brown. Deglaze with the sherry then return steak to the pan. Place some onions on top. Add tomato paste and chipotle. Adjust seasonings, then cover and simmer for 1 1/2 to 2 hrs, until tender. When the steak is done there should not be a lot of liquid in the pan.
