    1/2 cayenne pepper
    1/2 teaspoon curry powder
    1/2 teaspoon cumin
    1/2 teaspoon powdered ginger
    1/2 tablespoon coarse salt (kosher or sea salt)
    1/2 teaspoon freshly ground white pepper
    1/2 teaspoon freshly ground black pepper
    11/2 pounds pork chops
    1 tablespoon vegetable oil
    Mango chutney

    In a small dish, combine cayenne pepper, curry powder, cumin, ginger, salt, black pepper and white pepper. Heat a large cast-iron skillet over medium heat. Brush the pork chops with the vegetable oil and sprinkle with some of the spice mixture. The more you use, the hotter the chops will be. When skillet is hot, pan-fry the chops until done, turning a few times, about 10 minutes per side. Serve immediately with mango chutney.
