    Lemon Tarragon Roast Pork

    2 (�-pound) pork tenderloins
    � teaspoon salt
    � teaspoon pepper
    � teaspoon tarragon
    � cup butter
    Juice of 1 lemon

    Recipe



    Heat oven to 450 degrees. Sprinkle pork tenderloins with salt, pepper and tarragon. Place on a shallow baking sheet side by side (with a couple inches between them), and roast 10 minutes. In the meantime, combine butter and lemon in a cup, and melt butter in microwave (or in pan). When pork has cooked 10 minutes, pour lemon butter over the pork. Cook 10 to 12 minutes more, or until pork registers 155 degrees on a meat thermometer.

    Remove pork to a plate. Add � cup water (or white wine) to pan, and scrape up all the drippings from the pan. Thinly slice pork on the diagonal and serve, drizzled with a little of the pan sauce.
