    List of Ingredients




    1 lb. ground pork
    1/4 cup water chestnuts, a handful, chopped fine
    1/2 tsp. ground ginger
    1 tsp. ground garlic powder
    1/4 tsp. a pinch, ground Cayenne pepper
    1/2 cup ginger snaps, processed into crumbs
    1/4 cup dark soy sauce
    Coarse salt
    1 egg
    1 jar Hoisin Sauce
    10 green onions, sliced thin on a diagonal
    1 package bean sprouts
    1 carrot, grated
    fresh chopped cilantro
    6 12 inch flour tortillas






    Recipe



    Combine pork and next eight ingredients in a bowl. Form mixture into six patties.

    Heat two griddle pans or large skillets to high heat. Grill three pork patties at a time for four minutes on each side. On the other griddle, heat each tortilla for 30 seconds on each side and pile them up.

    To assemble, brush a tortilla with Hoisin sauce. Pile some bean spouts, green onion and carrot in the center of the tortilla. Sprinkle with a little cilantro chop. Top with a pork patty. Wrap the tortilla up and over on all sides, forming a square. Flip the stuffed tortilla over, cut from corner to corner, forming two Moo Shu pockets.
