    Veal Scallopine w/ Mozzarella

    List of Ingredients




    1 tablespoon vegetable oil

    2 tablespoons unsalted butter

    1 pound veal scaloppine (cut from the top round), pounded until thin

    Salt and pepper, to taste

    � pound fresh mozzarella, cut into 4 slices

    Recipe



    1. In a large skillet over high heat, heat the oil. When it is hot, add the butter. When the butter foam subsides, put the scaloppine into the pan.

    2. Brown them quickly on both sides -- about 1 minute or until they are cooked through. Sprinkle with salt and reduce heat to medium.

    3. Place a slice of mozzarella on each scaloppine and sprinkle with pepper. Cover the skillet and cook for 15 to 30 seconds or until the mozzarella softens.

    4. Transfer the scaloppine to a serving platter, mozzarella side up.

    5. Add 1 to 2 tablespoons water to the pan. Turn the heat up to high and let the mixture bubble. Scrape the bottom of the skillet. Drizzle the pan juices over each scaloppine and serve.
