Fettucini Verdi

List of Ingredients
1 lb green fettucini
1 small onion
2 oz olive oil
2 oz mushrooms, sliced (about 6, although I think it needs more)
1/2 stick butter
1/4 lb prosciutto, sliced into thin 3 in strips
1 can (15 oz) peeled whole tomatoes, sliced into small pieces, juice reserved
3 oz boneless breast of chicken, julienned
1 cup heavy cream
salt and pepper to taste
Pinch of nutmeg
Parmesan to serve Recipe
Start the water for the noodles.
Sauté chicken half-way. Set aside.
In a 12 in skillet, sauté the onion in the oil.
When the onion reaches a gold color, add mushrooms and sauté for 2 min more.
Add the butter, prosciutto, peeled tomatoes (and juice), and chicken. Simmer for 6 minutes.
Blend in heavy cream, nutmeg, salt and pepper to taste.
Separately prepare the noodles so they're ready at the same time as the sauce.
Combine in a serving dish, serve with freshly grated Parmesan.
