Penne ala Vodka

List of Ingredients
1 pound penne
2 cups marinara sauce
2 cups heavy cream
2 ounces vodka (your least expensive)
2 Tablespoons parmigiano, grated
Salt and pepper to taste
1 tablespoon parsley, chopped
Chili flakes to taste
Recipe
In a saucepot over a medium flame, heat up marinara sauce, then slowly pour in the cream. Bring the sauce to a gentle simmer, lowering the heat if necessary, and simmer until it reduces and thickens to a creamy consistency that will coat the pasta. It should coat a wooden spoon if you dip it in and then raise it.
Meanwhile, bring 3 quarts of water to a boil. Salt generously. Drop penne in. In order to time it right, use this guideline: when the pasta is about done, pour the vodka into the sauce. Drain the pasta, reserving about a cup of the water. Toss the pasta in the sauce with the parmigiano, adding a splash of the pasta water if the sauce is very thick. Sprinkle parsley on top and serve.
