    Penne with Tuna and Onion

    List of Ingredients




    coarse salt and ground pepper
    1 lb penne
    2 tsp olive oil
    1 lg red onion, chopped
    3 garlic cloves, thinly sliced
    1 c half and half
    3 anchovy fillets, mashed
    2-6 oz cans tuna in oil, drained
    3/4 c fresh parsley, chopped
    2 tbl capers, drained

    Recipe



    Cook pasta until al dente. Drain, reserving 1/2 c pasta water. Return pasta to pot.
    Meanwhile, in large nonstick skillet, heat oil over medium low heat. Add onion and garlic, season with salt and pepper. Cook, stirring often, until onion is tender and starting to brown, abt 8 minutes. Add half and half and anchovies and raise heat to high. Boil 2 minutes.
    Pour mixture over pasta. Add tuna, parsley, caper and reserved pasta water. Toss to combine.
