2 whole boneless, skinless chicken breasts, cut into strips
2 red peppers, chopped
1 green pepper, chopped
1 white onion, chopped
2 cups frozen corn, thawed
1 to 2 tablespoons canola oil
1 tablespoon Cajun seasoning or to taste
1 tablespoon flour
3 cups heavy whipping cream
1 pound fettuccine, cooked and drained
Diced tomatoes for garnish
Sliced green onions for garnish
Recipe
In large skillet, saute chicken and vegetables in canola oil until chicken is cooked through and vegetables are crisp-tender.
In small bowl, combine Cajun seasoning with flour and add to sauteed mixture. Combine thoroughly, then stir in cream. Bring to simmer, stirring as needed, and serve with fettuccine. Garnish with tomatoes and green onions. Makes 6 to 8 servings.
