Beer batter:
1 cup beer
1 egg
1/2 cup Cholula hot sauce
1 tablespoon pepper
1 tablespoon salt
1/2 cup cornmeal
1/2 cup flour
1 cup buttermilk
Combine all ingredients in a medium bowl. Stir well.
Chicken:
4 boneless, skinless chicken breasts, cut into 32 strips (about 2 pounds)
1/4 cup cornstarch
1 cup ground fresh tortillas (flour, corn or a combination, ground in food processor)
Vegetable oil (for deep frying)
Recipe
Dust chicken strips with cornstarch. Dip in beer batter, then in ground tortillas.
Fry pieces in oil at 365 degrees. Serve with honey chipotle sauce and Prairie Fire Hot Sauce (recipes follow).
Makes 32 strips, about 8 servings. Honey Chipotle Sauce:
1 can (4 ounces) chipotle chiles, chopped
1/2 cup rice vinegar
2 cups sugar
11/2 cups water
1 cup honey
2 tablespoons arrowroot dissolved in 1/2 cup water
1 1/2 tablespoons chopped garlic
1 1/2 tablespoons chopped ginger
Combine chiles, rice vinegar, sugar, water and honey in a large saucepan. Bring to a boil. Thicken with arrowroot mixture. Stir in ginger and garlic.
Prairie Fire Hot Sauce
32 ounces hot sauce
1/2 package Hidden Valley Ranch dressing mix
1 tablespoon vinegar
1/2 cup ketchup
1/2 cup Cholula hot sauce
1/8 cup New Mexico red chile powder
1 stick butter, melted
Combine all ingredients; blend well. Store leftover sauce in the refrigerator up to one month. Use for hot wings.
