    Chicken Breasts Stuffed with Spinach

    4 bone in chicken breasts
    10 oz pkg frozen chopped spinach, thawed and drained
    ½ cup ricotta
    2 garlic cloves, minced

    Recipe



    Preheat oven to 425. Drain thawed spinach and transfer to large bowl. Add ricotta, garlic, 1 tsp salt and ¼ tsp pepper; stir well to combine. Stuff chicken with filling (lift skin and stuff ricotta under skin). Season generously with salt and pepper. Place on a rimmed baking sheet and roast about 25 to 30 minutes.
