    ¼ c orange juice
    2 tbl olive oil
    1 tbl red wine vinegar
    1 tbl finely chopped fresh ginger
    2 to 3 tsp piri piri or other hot pepper sauce
    2 tsp paprika
    1 tsp cumin
    1 tsp grated orange peel
    ½ tsp ground coriander
    ½ tsp salt
    2 tbl finely chopped onion
    2 tbl chopped fresh parsley
    4 boneless skinless chicken breast halves

    In shallow glass or ceramic baking dish or in resealable plastic bag, stir together orange juice, oil, vinegar, ginger, pepper sauce, paprika, cumin, orange peel, coriander and salt. Stir in onion and parsley. Place chicken between 2 sheets of plastic wrap and, with flat end of mallet, flatten to ½" thick. Place chicken in marinade, turning to coat both sides. Refrigerate 2 to 4 hours.
    Heat grill. Remove chicken from marinade. Oil grill grates. Place chicken over grill on medium high heat. Cover grill and grill 8 to 10 minutes, until no longer pink in center, turning once and brushing with marinade halfway through. Discard remaining marinade.
