Chicken with Curry Dill Sauce

2 T (30 ml) butter or margarine
2 T (30 ml) all-purpose flour
1/8 teaspoon (.63 ml) salt
Dash pepper
1 cup (240 ml) milk
1/4 cup (60 ml) mayonnaise
1/2 teaspoon (2.5 ml) dried dill weed
1/2 teaspoon (2.5 ml) curry powder
6 bone-in chicken breast halves
1 T (15 ml) vegetable oil
Recipe
In a saucepan over medium heat, melt butter. Add the flour, salt and pepper; stir until smooth. Gradually add milk and bring to a boil. Boil and stir for 2 minutes. Remove from the heat. Add the mayonnaise, dill and curry; stir until smooth. Set aside. In a skillet over medium heat, brown chicken in oil. Place in a greased shallow
3-quart (3-liter) baking dish. Pour sauce over chicken. Bake, uncovered at 350 F (180 C) for 50-60 minutes or until meat juices run clear.
Makes 6 servings.
NOTE: I made this dish with 4 SKINNED bone-in chicken breast halves to cut down on the fat and calories. They fit tightly in an 8x8-inch (20x20-cm) dish, so the sauce covered them well, and they did not dry out.
