    6 boneless, skinless chicken breasts
    2 tablespoons butter
    2 tablespoons chopped shallots
    1/2 cup 1/4"-diced onion
    1/2 cup sliced mushrooms
    1 pound cooked, chopped spinach
    1 teaspoon chopped fresh tarragon
    1/2 teaspoon salt
    1/2 teaspoon coarse black pepper
    2 tablespoons whipping cream
    1 cup flour seasoned with salt & pepper
    2 large eggs beaten with 1 tablespoon milk
    1 cup bread crumbs
    salad oil for frying

    01.Place the chicken breasts between sheets of plastic wrap and pound to flatten Do this for all 6 pieces.

    02.In a sauté pan, melt the butter and add the shallots. Heat for 30 seconds. Add the onion, mushrooms, spinach, tarragon, salt and black pepper. Cook for 1 minute, add the cream, combine and turn off the heat.

    03.Lay the flattened chicken breast on a cutting board, nice-side down. Divide the filling into 6 portions and roll each portion into a tube shape. Place in the center of the chicken breast and roll the breast up like a cigar. Repeat for all 6 breasts.

    04.Place in a covered container without letting them touch each other. Freeze for at least 2 hours.

    05.Place the seasoned flour on a plate, place the beaten egg in a bowl and place the bread crumbs in another bowl. Dredge the chicken breasts in seasoned flour, then in the egg batter and then in the bread crumbs.

    06.Heat the oil in a large sauté pan. Carefully place the breaded chicken breasts in the oil and brown on all sides. Remove from the pan and drain on paper towels.

    07. Place in an 8x8x2-inch glass baking dish and place in a preheated 350 degree oven for approximately 30 minutes or until the chicken is cooked.
