Parmesan Parsley Chicken Breasts

1 1/2 lbs. boneless, skinless chicken breasts (6-8)
1 cup fresh bread crumbs
1 cup grated parmesan cheese
1/2 cup dijon mustard
1 shallot, minced
1/4 cup dry white wine
3 Tablespoons fresh parsley, minced
1 garlic clove, crushed
1/4 t. salt
1/4 t. pepper
1 Tablespoon butter, melted
Recipe
Preheat oven to 375. Line 9 X 13 baking dish with foil. In a shallow dish (like a pie pan), combine the dijon mustard, white wine and crushed garlic. Stir or whisk to combine well. In a larger bowl, combine bread crumbs, parmesan cheese, parsley, salt, pepper, minced shallot and melted butter. Combine well with your hands. Coat each chicken breast in the mustard mixture, then bread them and then put them in the baking dish. Bake at 375 for 25-30 mins., or until juices run clear.
