    Pearl of the Orient Cashew Chicken

    List of Ingredients




    12 oz. diced celery
    10 oz. diced chicken breast
    4 oz. Roasted Cashews
    2 Tablespoon diced scallion
    1/2 T minced garlic
    1 T cornstarch and water mixed
    1 T sesame oil
    3 T soybean oil

    Sauce, kung pao, shake the following together

    1/2 cup chicken stock
    1 T oyster sauce
    1 T dark soy sauce
    1 T light soy sauce
    dash of white pepper
    1/2 teaspoon minced garlic
    1/2 teaspoon minced ginger
    1/2 teaspoon sugar
    1 T hoisin sauce
    1/2 T white cooking wine



    Recipe



    1. Saute chicken in a very hot wok with 2 tablespoon of oil, till it's cooked but still tender, set dish aside.

    2. Oil the wok and stir celery till 50% cooked but still firm, set to the side.

    3. Heat wok, oil, put ginger and scallion in. Pour sauce in wok and cornstarch and water in. Heat till sauce thickens, put vegetables and meat in wok. Mix with sauce, sprinkle sesame oil in, dish up and serve.
