    Stuffed Chicken Breasts

    4 chicken breast halves
    1/2 lb. spinach, cooked & drained
    1/4 cup parmesan cheese, grated
    1/2 cup cheddar cheese, grated
    1/4 cup bacon, cooked & chopped
    pepper
    1 Tbsp. salt
    1/2 cup olive oil chicken stock
    1/4 cup heavy cream
    1 Tbsp. parsley, chopped


    Recipe



    Make a pocket in each chicken breast. Combine spinach, cheeses, bacon, salt, and pepper. Stuff mixture into chicken breast. Heat olive oil in pan. Sauté chicken on one side. Turn chicken over and continue cooking through in a 350º F oven, until the internal temperature of the chicken AND the stuffing reaches 170º F. Remove pan from oven and chicken from pan. Deglaze with chicken stock and let simmer for a few minutes. Add heavy cream and heat through. Season to taste and garnish with fresh parsley.
