    Best Potato Salad

    List of Ingredients




    4 cups cooked potatoes, cut up (about 2 lbs.)
    2 hard-cooked eggs, diced
    2 TBl minced red onion
    1 stalk celery, sliced
    1/2 cup mayonnaise
    1 Tablespoon white vinegar
    1/2 teaspoon dry mustard
    1/2 teaspoon celery seed
    2 Tablespoons sweet relish
    1/8 teaspoon cayenne pepper
    1/2 teaspoon salt
    1/4 tsp pepper
    2 Tbl parsley

    Recipe



    Combine potatoes with vinegar and let sit for about 1/2 hours. Add eggs, onion, celery to potatoes in a medium-size bowl. Combine remaining ingredients in a small bowl and mix thoroughly. Add to potatoes, mix well. Chill before serving.

    6 to 8 servings.
