Blue Cheese Potatoes--2 Versions

3 to 4 medium potatoes, peeled and very thinly sliced
1 medium onion, peeled and very thinly sliced
1/4 cup butter melted
salt and pepper to taste
1 cup half and half
1/2 cup blue cheese or more to taste
Recipe
In 8 or 9 inch square baking dish, combine potatoes, onion, butter, salt and pepper. Toss to mix. Spread to make an even layer. Pour half and half over top. Cover and bake at 375F for 30 minutes. Remove from oven and sprinkle with blue cheese. Return to oven, uncovered and bake another 10 to 15 minutes. If desired, turn on the broiler to brown top.
Blue Cheese Potatoes Delmonico
8 medium potatoes
1/2 cup butter
1/2 cup flour
1 cup milk
1 cup cream
1/2 cup blue cheese crumbles
1/3 cup bread crumbs
Preheat the oven to 375F. Boil the potatoes. Allow to cool slightly and dice. Place in a casserole dish. Melt the butter in a saucepan. Whisk in the flour and cook for 5 minutes, stirring frequently. Whisk in the milk and cream. Reduce the heat and simmer for 20 minutes. Whisk in the cheese until blended. Pour over the potatoes. Top with the bread crumbs and bake for 25 minutes. Serves 4.
