    Classic Potato Salad

    List of Ingredients




    3-1/2 pounds red-skinned potatoes, peeled, cut into 3/4-inch pieces
    1/4 cup apple cider vinegar
    2 hard-boiled eggs, chopped
    1 small red onion, diced
    1 rib celery, diced
    1/3 cup Italian flat leaf parsley, chopped
    3/4 cup mayonnaise
    3/4 cup sour cream
    1 tablespoon Dijon mustard
    Coarse salt and freshly ground black pepper

    Recipe



    1. Using a large pot of boiling salted water, cook potatoes until tender, about 12 minutes
    2. Drain and transfer potatoes to large bowl
    3. Drizzle vinegar over hot potatoes, cool to room temperature
    4. Add eggs, onion, celery and parsley, season with salt and pepper
    5. Using a medium bowl, whisk together mayonnaise, sour cream and mustard, season with salt and pepper
    6. Add dressing to potato mixture and gently toss to combine
    7. Cover and refrigerate
