    Heavenly Ham Potato Salad

    10 to 12 new or red potatoes
    1 cup cooked ham, diced
    8 slices thick-cut peppered bacon, cooked and crumbled
    ½ cup chopped sweet onion
    3 hard-cooked eggs, coarsely chopped
    1/3 cup mayonnaise
    1/3 cup Dijon or Champagne mustard
    Salt, freshly ground black pepper to taste

    Bring salted water to a boil in a pot large enough to accommodate the potatoes.
    Cook the potatoes: Scrub and, if you wish, partially skin the potatoes. Cut into fourths and boil until tender. Cool.

    Mix potatoes with ham, peppered bacon, onions and hard-cooked eggs. Combine mayonnaise and mustard and pour over potato mixture, stirring to coat. Salt and pepper to taste.

    Cover tightly and chill thoroughly. Serve cold.
