    4 cups diced uncooked potatoes
    ½ cup chopped celery
    1 small jar pimento, drained
    ½ lb Cheddar cheese
    1 tsp. Salt
    1 small chopped onion
    ½ cup cracker crumbs
    2 cups white sauce

    Recipe



    Place potatoes in pan, add onion, celery and salt. Cover with boiling water and cook 5 minutes. Drain and add pimento. Place in greased baking dish. Pour white sauce over potatoes. Sprinkle with crumbs. Dot with butter and bake at 350º until browned, about 20 to 25 minutes. Serves 6 to 8.

    White Sauce:
    In saucepan, melt 4 tbsp butter. Add 4 tbsp. flour and mix well. Gradually add 1-1/2 cups milk, tsp. salt, pepper and lastly the grated cheese to bend
