Stuffed Baked Potatoes

6 large baking potatoes
2 eggs
1 cup of sour cream
1/2 cup (1 stick) of butter, softened
1/2 teaspoon of onion powder
1/2 teaspoon of salt
1/4 teaspoon of black pepper
Paprika for sprinkling
Recipe
Preheat oven to 400°F. Wash the potatoes and pierce them
with a fork. Bake the potatoes for 1 hour, or until tender
when pierced with a fork. Slice about 1/2 inch off of the
top of each potato and scoop out the inside, leaving about
a 1/4-inch-thick potato shell. Place the scooped out potato
in a medium bowl. Add the eggs, sour cream, butter, onion powder, salt, and pepper and beat until smooth. Spoon into the potato shells and sprinkle the tops lightly with paprika. Return to the hot oven and bake for 25 to 30 minutes, or until the potatoes begin to brown on top.
